ayam Buah Keluak (braised chicken with black nut)
Uncle Kaypo's recipe for Ayam Buah Keluak....hope you like it1.5kg chicken maryland boneless, skin on.Cut to bite size, season with a sprinkling of salt, white pepper and turmeric powder.deep fry until light golden brownSauce:1 bottle Uncle Kaypo's Not Just a Sambal1 teaspoon of roasted belachan (optional)4 Kaffir Lime leaves1 bruised lemon grass1 teaspoon tamarind concentrate or 6 dried tamarind1/2 packet of Buah Keluak meat (sliced and pounded to soften the meat) or more if you like the rich aroma....SugarSaltPour about 4 tablespoon of cooking oil into a wok, throw in the Kaffir Lime and Lemongrass and fry until fragrant (2 mins). Empty the bottle of Not Just a Sambal (fill the jar with water and keep), into the wok and continue frying in medium heat, add the Buah Keluak meat, Belachan, Tamarind, and the jar of water, and continue cooking until the Buah Keluak meat is fully infused into the sauce. Add more water if necessary to form a nice gravy. Add fried chicken pieces and continue cooking until the gravy is rich. Add Salt and Sugar to taste.Serve with steamed rice...or noodles.
